About the Flavor
In my (Maura's) previous life, I worked on a study abroad program in Poland and was lucky to visit the country twice. During that time, I was gifted some jam filled, chocolate coated, gingerbread cookies. The soft, strong gingerbread, Pierniki, is famous and comes from the historical city of Torun. We've done our best to recreate that flavor profile in ice cream form. Some may remember this flavor in the form of an ice cream sandwich we made last year. We've made some changes and are absolutely obsessed with the way the flavors have come out in this flavor. We created our own Lebkuchen gingerbread spice mix and used it to make gingerbread cookies and, subsequently, gingerbread cookie butter. The cookie butter created a rich, flavorful base for our ice cream, where our orange dark chocolate chunks and tart marmalade swirl create interest and texture.
